Crocodylus Park






I took the children to Crocodylus Park last weekend for something to do. We'd been before but not for over a year so I thought they might enjoy going again, and to get out of the house.
It was a stinking hot day and we all looked like beetroots after a few minutes of walking around but we still enjoyed our time there. I never get sick of seeing big crocs up close as I find them so fascinating.
The lions and the other animals were interesting also. After our round of the park I bought the kids icecream to cool them down, which I think they appreciated!

Christmas Pudding... Finally

After much procrastinating I finally got round to making my first Christmas pudding. I don't know why I waited so long, it turns out it's so easy!
The recipe is compliments of my lovely mum and it's the easiest recipe I have come across for Christmas Pudding.
I made it in the slow cooker yesterday and served it for dessert tonight with ice cream, and I must say, delish!
The kids enjoyed it. In fact, Master C had seconds and still cleaned his bowl. I was very impressed and will definitely be making it again before Christmas.

Rocky Road!


SO me and the girls made Rocky Road today! It's my first time making it and it tastes sooo good. I'll probably never buy it from the shop again.
It was fun to make, however I don't recommend making this with kids if you actually want to use most of the ingredients as half of it will end up in their mouths. Or yours for that matter!
I thought I may end up with this problem so I had more ingredients ready than what the recipe stated!
WARNING: Do not make this if you are on a diet. It is very addictive!
ROCKY ROAD
500g chocolate, melted (I used half dark, half milk)
200g marshmallows, chopped
1/4 cup dessicated coconut
3 x 55g turkish delight bars, chopped
1/2 cup unsalted peanuts
Method
1. Combine all ingredients in a bowl and mix well.
2. Pour mixture into a lined slice tin and refrigerate until set.
3. Use a warm knife to cut the slice onto squares.

Too Busy!

Life is so busy lately! Especially at work! I feel there's not enough time in a day sometimes. Usually it's pretty busy at work with people needing to travel everywhere, but this time of year is absolutely crazy! It seems like every single member has put in leave travel in the last few weeks.
Between myself and the other movements clerk in my office there is currently about 80 applications on our desks, and that pile seems to be growing daily. And with those come the ones out of left field also; the last minute travel bookings that need to be done then and there.
I'm so looking forward to time off over Christmas. I've managed to be granted four weeks leave which I'm pretty excited about as Hubby and I and the kiddies will be taking a roadtrip to Brisbane to see family and to get out of Darwin for a bit.
It may not be many peoples idea of a relaxing holiday, but to me being stuck in a car for days on end with the kids makes for a good bonding experience. So bring it on I say!
I'll just be happy to be able to breathe easy for a few weeks and not think about work, housework, bills, grocery shopping etc.....

Rum Balls


A few weeks ago I decided to make a batch of rum balls as I've always loved them but never actually made them.
I made them using cake crumbs as the key ingredient, and of course rum. The presentation didn't turn out too great as I don't seem to have the knack for dipping things in chocolate and making them look neat, but the taste was mouth watering.
I took half of the batch to work with me to share among my colleagues and returned home with an empty container and great reviews.
I will be making them again sometime before Christmas. And if you love rum, I reccommend making these as they are just lovely.

Woohoo a new blog :)

A new blog and hopefully not so slack me! This blog will be a bit of everything that goes on in the world of me, a working mum of three and the things my family and I get up to.
I love to bake so am planning on posting some pics and recipes of home baked goods. Lets see how it goes!
