Double Chocolate Muffins


I know there aren't many on the plate in the picture, but it's because Dearest Hubby stole one, and then proceeded to smuggle a few more out of the kitchen when he realised just how good they taste. And this is the man that rarely eats any baked goods, so I see that as a very good sign!

How to make.

You will need:

1 3/4 cups plain flour
1 tspn baking soda
1 cup sugar
1/4 cup cocoa
100g butter
1 egg
1 cup yoghurt (any type will do, but I use vanilla)
1/2 cup milk
1 tspn vanilla
1/4 - 1/2 cup choc chips

Method

1. Sift the ingredients into a mixing bowl.
2. Melt the butter and add to remaining wet ingredients and mix together.
3. Add combined wet ingredients to the dry ingredients and mix together gently.
4. Divide mixture into muffin tins.
5. Bake at 180 - 200 degrees for 10 - 15 mins.

Easy Peasy!

I actually realised as I started making these that I didn't have enough choc chips, so I smashed up about 60g of toblerone and added to the mixture (there would have been more but it didn't make it into the bowl). I also use a little less sugar than the recipe calls for, though that's just personal preference.

Now I've made these a couple of times now and both have turned out great. It's basically a fool proof recipe. However, if you're expecting light and fluffy type muffins, then you might be disappointed. These are slightly denser and more moist than the usual muffin, but I think that's why I love them so much.
