I didn't take a pretty enough picture for this recipe, so it will come later....
But just take my word that these taste amazing!
You will need:
250g frozen spinach (or fresh if you prefer)
1 medium onion, finely chopped
1/2 cup parmesan cheese
3 sheets frozen puff pastry
1 egg, lightly beaten
250g ricotta cheese
1 tspn minced garlic
a few rashers bacon
Method:
1. Brown onion, bacon and garlic together until browned.
2. Add spinach and cook until liquid has evaporated.
3. Add Ricotta cheese and stir over heat until all is combined.
4. Transfer mixture to a bowl and cool slightly.
5. Add parmesan cheese and season with salt and pepper.
6. Cut pastry sheets in half and spoon I/2 cup of mixture along the long end of the pastry. Brush egg over the other long edge, and roll up to enclose filling and form rolls.
7. Place seam side down onto baking sheet and brush tops with egg mixture. Cut each roll into three if desired. Bake in 200 degree oven for 20 - 25 minutes until golden.
We all love these! Personally, I think they taste better than the ones from a bakery.
